- 7 lb. large yellow cucumbers
- 1 c. lime (pickling)
- 3 c. white vinegar, divided
- 1 (2 oz.) bottle red food coloring
- 1 Tbsp. alum
- 6 1/2 c. sugar
- 8 sticks cinnamon
- 1 large pkg. red cinnamon candies
Directions

1Peel and seed cucumbers.

2Soak 24 hours in 1 cup lime to a gallon of water.

3Drain, rinse and soak in ice water for 3 hours. Mix 1 cup vinegar, food coloring and alum with enough water to cover cucumbers.

4Pour mixture over cucumbers in pot and simmer 2 hours.

5Pour off liquid.

6In another pot, boil 2 cups vinegar, 2 cups water, sugar, cinnamon sticks and candy until candy melts. Pour over cucumbers and let stand 24 hours.

7Pour off liquid into another pot and bring to boiling again.

8Pack cucumbers in warm jars and seal.

9Process in water bath for 10 minutes.

10These are nice at Christmas.
