Ingredients

  • 6 medium tomatoes, chopped
  • 6 serrano or jalapeno chiles, deveined, seeded and chopped
  • 5 cloves garlic, minced
  • 1 medium onion, chopped
  • 5 scallions, chopped (including green tops)
  • 1/2 c. fresh parsley or cilantro, chopped
  • 1/4 c. chopped fresh chives
  • 1 Tbsp. freshly chopped oregano
  • 1 tsp. sugar
  • salt and freshly ground pepper to taste

    In blender or food processor fitted with steel blade, process tomatoes, chiles and garlic until coarsely chopped.

    Turn into medium-size bowl and add remaining ingredients.

    Chill before serving.

    Spicy and light, great with tortillas, guacamole, chips and grilled hamburgers.
