- 2 medium bell peppers
- 2 medium onions
- 4 strips bacon, fried crisp
- 1 can tomatoes
- 1 c. tomato sauce
- 1 tsp. Parmesan cheese
- salt and pepper to taste
- 1 to 2 drops Tabasco sauce or to taste
Directions

1Fry bacon; remove and place on paper towel.

2Brown onions and bell peppers in drippings.

3Add tomatoes, sauce, Tabasco and crumbled bacon.

4Pour in greased casserole; sprinkle top with Parmesan cheese and bake at 325° for 30 minutes or until rice is dry enough to separate.
