- 2 large onions, chopped (1 c.)
- 1 clove garlic, minced
- 2 Tbsp. margarine
- 2 Tbsp. olive oil
- 1 1/4 c. uncooked rice
- 1 can tomatoes, crushed
- 1 can chicken broth
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Saute onion and garlic in butter or margarine and olive oil until soft in medium saucepan.

2Stir in rice, tomatoes, chicken broth, salt and pepper; heat to boiling, cover, turn down to low. Cook slowly 15 minutes or until rice is tender and liquid is absorbed.

3Fluff up rice with fork, spoon into a serving bowl.
