  • 2 c. cooked rice (day-old, dry and fluffy)
  • 1/2 onion, chopped
  • 1/2 celery, chopped
  • 1/2 c. bell pepper, chopped
  • parsley, chopped
  • 2 c. fresh tomatoes (puree or use sauce)

Directions

    Smother vegetables with 2 tablespoons oil.

    Season with salt, bell pepper, red pepper and Worcestershire.

    Cook slowly until almost dry.

    Add rice and stir with a fork to mix.

    Cook until dry.

    To the mixture, add bacon, ham, shrimp, crawfish or crabmeat.
