- 1/2 celery, chopped
- 1/2 c. bell pepper, chopped
- parsley, chopped
- 2 c. fresh tomatoes (puree or use sauce)
Directions

1Smother vegetables with 2 tablespoons oil.

2Season with salt, bell pepper, red pepper and Worcestershire.

3Cook slowly until almost dry.

4Add rice and stir with a fork to mix.

5Cook until dry.

6To the mixture, add bacon, ham, shrimp, crawfish or crabmeat.
