- 2 tablespoons vegetable oil
- 1 small onion, chopped
- 2 cups long-grain rice
- 1/4 cup tomato paste
- 1/2 cup finely chopped smoked beef sausage
- 4 cups water
Directions

1Heat oil in pot; add onion and saute a few minutes until onion is soft.

2Add rice and cook, stirring, a minute or two with onion, tomato paste and sausage.

3Stir in water; partly cover and bring to boil.

4When water boils, stir once; cover tightly and reduce heat to simmer.

5Cook until water has evaporated, about 17 minutes.
