- 1 (4 lb.) red snapper
- 1/2 c. olive oil
- 1/2 c. flour
- 1/4 c. chopped onions
- 4 cloves garlic, minced
- 1/2 c. chopped celery
- 2 (1 lb.) cans tomatoes
- 1 bay leaf
- pinch of thyme and oregano
- salt and pepper to taste
Directions

1Make dark brown roux of oil and flour.

2Add onions, garlic and celery; cook until soft.

3Then add tomatoes, bay leaves, thyme, oregano, salt and pepper.

4Cook slowly for 1 hour.

5Clean red snapper and place in oblong pan.

6Pour sauce over fish and bake in 350° oven, until fish is easily pierced with fork, about 30 minutes.

7Baste fish with sauce throughout cooking time.

8This recipe makes about a quart of sauce.

9Serves 6 or 8.
