  • 1 1/2 c. sugar
  • 2 c. salad oil
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 1 (2 oz.) bottle red food coloring
  • 2 1/2 c. flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 2 Tbsp. cocoa
  • 1 c. buttermilk
  • 2 tsp. vanilla
  • 1 stick margarine
  • 1 (8 oz.) pkg. cream cheese
  • 1 box powdered sugar
  • 1 c. chopped nuts

Directions

    Cream the sugar and oil in a mixing bowl.

    Add eggs; beat well.

    Add the vinegar and food coloring; beat well.

    Sift the flour, soda, salt and cocoa together; add to the creamed mixture alternately with buttermilk.

    Add 1 teaspoon vanilla; beat well. Pour into 2 greased and floured cake pans.

    Bake at 350° for 30 to 35 minutes.

    Cream the margarine and cream cheese in a bowl; add remaining vanilla.

    Sift the powdered sugar; add to the creamed mixture gradually.

    Add nuts; mix well.

    Spread on top of cake layers and place layers together.
