- 1 medium-large onion, chopped
- 2 sprigs of fresh rosemary, leaves removed and finely chopped
- Salt and pepper
- 1/4 cup tomato paste
- 1 cup chicken stock
- 2 (15-ounce) cans cannellini beans, drained
Directions

1Heat the EVOO in a large skillet over medium heat, add the onions, and season with rosemary, salt, and pepper.

2Cook the onions until soft, 8 to 10 minutes.

3Stir in the tomato paste for 1 minute, stir in the stock, then stir in the beans and reduce the heat to low.
