Refreshing Sole Meuniere

- 5 tbsp Rice vinegar
- 2 filets Sole
- 1 Herbs (sage, parsley, etc)
- 1 tbsp Olive oil
- 1 White wine or sake
Directions

1Cut notches into the surface of the sole and then season with salt and pepper.

2Let sit for 5 minutes and then lightly coat with flour.

3Heat olive oil in a frying pan.

4Place the sole into the pan and pan-fry.

5Once both sides have browned, pour in the white wine and add the herbs.

6When the alcohol has cooked off, remove the fish and herbs from the pan and add the rice vinegar to the pan.

7Immediately pour the sauce over the fish and enjoy.
