- 4 c. water
- 1 1/4 c. pinto beans
- 1/4 tsp. ginger
- 1/2 c. chopped onion
- 1/4 c. margarine
- 3/4 tsp. salt
- 1/4 tsp. garlic powder
- 1/4 tsp. cumin
- 1/4 tsp. chili powder
- 1/2 c. shredded Cheddar cheese
Directions

1Put first 3 ingredients in pot; bring to a boil for 2 minutes. Let stand 1 hour.

2Pour off water.

3Cover with fresh water just to barely cover.

4Boil gently 1 1/2 hours or until tender.

5Add onion.

6Continue cooking until onion is soft.

7Pour off excess liquid, if any.

8Mash beans, while hot, and add remaining ingredients.

9Bake at 350° for 15 minutes with 1/2 cheese on top.
