- 3 c. pinto beans, soaked overnight
- 1 (16 oz.) mild salsa
- 2 tsp. red pepper
- 1 Tbsp. garlic
- 1 tsp. pepper
- 1 (16 oz.) guacamole
- 1 (16 oz.) light or nonfat sour cream
- 2 tomatoes, diced
- 2 c. shredded cheese
- chips
Directions

1Rinse soaked pinto beans.

2Put beans in large pot and cover with water.

3Cook for 3 hours.

4Add next 5 ingredients.

5Stir and simmer until thick.

6Mash down.
-
7Layer in 13 x 9 x 2-inch pan. Layer guacamole, sour cream, cheese and tomatoes.

8Bake at 350° for 30 minutes.

9Serve with chips as your spoon.

10Eat with a side of salad.
