Ingredients

  • 3 medium onions
  • 4 c. sugar
  • 4 c. vinegar
  • 1/2 c. pickling salt
  • 1 1/2 tsp. turmeric
  • 1 1/2 tsp. celery seed
  • 1 1/2 tsp. mustard seed
  • 2 heads fresh dill
  • 2 or 3 cloves garlic
  • 1 small red or green pepper (optional)
  • 2 qt. water
  • 1 qt. vinegar (5% acidity)
  • 1 c. Mrs. Wages canning and pickling salt

Directions

    Fill the quart jars to within 1/2 inch from the top of jar with the boiling brine.

    Cap each jar when filled.

    Process 15 minutes in boiling water bath.

    Boiling water should cover jars by 1-inch.

    Start processing time count when filled jars are placed in rolling boiling water.

    Use canner with tight fitting lid. Leave on high heat during processing.

    Ready in 3 to 4 weeks.
