Restuffed Potatoes

  • 8 large baking potatoes
  • 1/2 c. butter
  • 2 to 4 c. sour cream
  • 3/4 lb. bacon, fried and crumbled
  • 1/4 lb. Cheddar cheese, grated
  • 4 green onions (including tops), chopped
  • salt and pepper to taste
  • paprika

Directions

    Bake potatoes at 375°

    until done (about 60 minutes).

    Melt butter in a skillet.
  4. 4
    Cut potatoes in half lengthwise and spoon pulp into skillet.

    Mash potatoes and mix butter, using a fork. Add enough sour cream to make a moist, but not runny, mixture. Add bacon, cheese, onions, salt and pepper to taste.

    Scoop mixture back into potato shell.

    Sprinkle with paprika.

    Place on baking sheet and bake at 350°

    for 45 minutes.
