- 8 large baking potatoes
- 1/2 c. butter
- 2 to 4 c. sour cream
- 3/4 lb. bacon, fried and crumbled
- 1/4 lb. Cheddar cheese, grated
- 4 green onions (including tops), chopped
- salt and pepper to taste
- paprika
Directions

1Bake potatoes at 375°

2until done (about 60 minutes).

3Melt butter in a skillet.

4Cut potatoes in half lengthwise and spoon pulp into skillet.

5Mash potatoes and mix butter, using a fork. Add enough sour cream to make a moist, but not runny, mixture. Add bacon, cheese, onions, salt and pepper to taste.

6Scoop mixture back into potato shell.

7Sprinkle with paprika.

8Place on baking sheet and bake at 350°

9for 45 minutes.
