  • 2 c. cooked rice
  • 1 (8 oz.) can sauerkraut, drained
  • 1 (12 oz.) can corned beef, diced
  • 1 c. Swiss cheese, grated
  • 1/2 c. mayonnaise
  • 3 Tbsp. sweet pickle relish
  • 1 tsp. prepared mustard
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 medium tomato, peeled and sliced
  • 1/2 c. rye bread crumbs

Directions

    Combine rice, sauerkraut, corned beef and 1/2 cup cheese. Blend mayonnaise, pickle relish, mustard, salt and pepper.

    Stir into rice mixture.

    Turn into a 2-quart casserole.

    Arrange tomato slices on top.

    Sprinkle with remaining cheese.

    Top with bread crumbs; bake at 350° for 30 minutes, or until hot and bubbly. Yields 6 servings.
