- 2 c. cooked rice
- 1 (8 oz.) can sauerkraut, drained
- 1 (12 oz.) can corned beef, diced
- 1 c. Swiss cheese, grated
- 1/2 c. mayonnaise
- 3 Tbsp. sweet pickle relish
- 1 tsp. prepared mustard
- 1 tsp. salt
- 1 tsp. pepper
- 1 medium tomato, peeled and sliced
- 1/2 c. rye bread crumbs
Directions

1Combine rice, sauerkraut, corned beef and 1/2 cup cheese. Blend mayonnaise, pickle relish, mustard, salt and pepper.

2Stir into rice mixture.

3Turn into a 2-quart casserole.

4Arrange tomato slices on top.

5Sprinkle with remaining cheese.

6Top with bread crumbs; bake at 350° for 30 minutes, or until hot and bubbly. Yields 6 servings.
