Reuben Casserole

Ingredients

  • 8 oz. medium noodles
  • 2 (10 3/4 oz.) cans celery, mushroom or chicken soup
  • 1 1/2 c. milk
  • 1/2 c. chopped onion
  • 1 tsp. prepared mustard
  • 1 tsp. caraway seed (optional)
  • 3 1/2 c. cooked chicken, 1 lb. Polish sausage, cut into bite size pieces, or 1 lb. ham, cut into cubes
  • 2 (16 oz.) cans sauerkraut, rinsed and drained
  • 1 c. shredded Swiss cheese
  • 3/4 c. fine dry bread crumbs
  • 1 Tbsp. butter, melted
  • 1/2 tsp. garlic powder (optional)

Directions

    Cook noodles in boiling water for 4 minutes; drain and set aside.

    In large bowl, combine soup, milk, onion, mustard and caraway seed.

    Gently stir in chosen meat, drained sauerkraut and partially cooked noodles.

    Put into greased 3-quart baking dish. Top with cheese.

    In small bowl, combine bread crumbs, melted butter and garlic powder.

    Sprinkle over mixture in baking dish. Bake, uncovered, in 350° oven for 45 minutes or until heated through.
