Rhubarb Bread

Ingredients

  • 2 c. diced rhubarb
  • 1 1/2 c. sugar
  • 1 c. oil
  • 1/2 c. milk
  • 3 eggs
  • 3 c. plus 2 Tbsp. all purpose flour
  • 2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. cinnamon
  • 1/2 c. chopped pecans or walnuts

Directions

    Place rhubarb, sugar, oil, milk, and eggs in blender, process until smooth.

    Combine flour, soda, baking powder, salt and cinnamon in large bowl.

    Stir well.

    Add rhubarb mixture, stirring just until dry ingredients are moistened.

    Stir in nuts.

    Pour batter into 2 greased loaf pans.

    Bake at 325° for 1 hour - or until a toothpick inserted in the center comes out clean.

    Let cool in pans 10 minutes - remove from pans and cool on rack.
