- 1 1/2 cups brown sugar
- 2/3 cup oil
- 1 egg
- 1 teaspoon baking soda
- 1 cup buttermilk
- 1 teaspoon salt
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1/2 cup nuts, chopped
- 1 1/2 cups rhubarb, diced
- Topping
- 1/2 cup sugar
- 1 tablespoon butter
- 1 teaspoon cinnamon
Directions

1Preheat the oven to 325°F.

2Grease two loaf pans.

3Dice the rhubarb and chop the nuts.

4Mix everything, except the topping ingredients, together in a large bowl.

5Mix well and pour into prepared loaf pans.

6Topping: Mix the topping ingredients together and sprinkle over the top of the batter.

7Bake for 60 minutes, taking care not to overbake. This was in big letters so it must be a problem to watch out for lol.
