Ingredients

  • 1 1/2 c. flour
  • 1 1/2 c. sugar
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 c. unsweetened cooked rhubarb
  • grated rind of 1 lemon
  • 2 eggs, beaten
  • 1 c. cut up dates
  • 1 c. chopped nuts
  • 1 c. oil

Directions

    Mix dry ingredients well. Add rhubarb, lemon rind, eggs, oil and nuts.

    Mix well.

    Pour into greased and floured 13 x 9 x 1 1/2-inch pan. Bake at 350° for 50 to 60 minutes.

    Use juice of lemon and powdered sugar for glaze.

    Spread on cake while still warm.
