Rhubarb-Date Pudding

  • 2 c. rhubarb, diced
  • 1 c. dates, chopped
  • 1/4 c. water (or more)
  • 1/2 c. sugar
  • 1 c. soft bread crumbs
  • 1 t. butter

Directions

    Cook rhubarb and dates in water for 5-8 minutes. Add sugar, crumbs and butter. Bake in a greased 1-quart casserole at 350° for 15 minutes. Serve warm or cold with whipped cream or other topping. Serves 4.
