- 3 Tbsp. flour
- 1 c. sugar
- 1 egg, beaten
- 2 c. rhubarb, cut into small pieces
Directions

1Sift flour and sugar together; add egg.

2Beat thoroughly and add rhubarb.

3Line pie pan with pastry and pour in filling.

4Cover with top crust or lattice and bake in a very hot oven (425°) for 10 minutes.

5Reduce temperature to moderate (350°) and bake 35 minutes longer.

6Makes one 9-inch pie.
