- 3 c. rhubarb (1/4-inch slices)
- 2 Tbsp. cornstarch
- 1 1/2 c. sugar
- 1 egg, slightly beaten
- 2 Tbsp. butter
- strawberries for strawberry rhubarb*
- 2 unbaked pie crusts
Directions

1Cut rhubarb in 1/4-inch pieces.

2Put in bowl and mix with cornstarch.

3Add slightly beaten egg and sugar; mix well.

4Turn into unbaked crust.

5Cut butter pieces and put on rhubarb mixture. Cover with top crust.

6Brush top crust with milk and sprinkle with sugar.

7Cut slits in crust and bake at 425° for 30 minutes, then at 325° for another 30 minutes.
