  • 1 unbaked pie shell
  • diced rhubarb
  • 1 c. sugar
  • 2 egg yolks
  • 2 egg whites
  • 1 lump butter
  • 2 Tbsp. flour

Directions

    Fill the pie shell 3/4 full of rhubarb.

    Mix sugar, egg yolks, butter and flour.

    Beat egg whites stiff.

    Fold in other mixture and pour over rhubarb.

    Bake at 375° for 20 minutes; 325° for 10 minutes.
