- 1 c. sugar
- 1 egg, beaten
- 2 c. frozen or fresh rhubarb (6 stalks)
- 2 shallow pie shells
Directions

1Sift flour and sugar together.

3Slot bottom pie shell.

4Add rhubarb; pour mixture over rhubarb, covering well. Cover with second shell; slot air holes.

5Bake at 425° for 10 minutes, then at 350° for 35 minutes, or until golden brown.
