  • 3 Tbsp. self-rising flour
  • 1 c. sugar
  • 1 egg, beaten
  • 2 c. frozen or fresh rhubarb (6 stalks)
  • 2 shallow pie shells

Directions

    Sift flour and sugar together.

    Add egg.

    Slot bottom pie shell.

    Add rhubarb; pour mixture over rhubarb, covering well. Cover with second shell; slot air holes.

    Bake at 425° for 10 minutes, then at 350° for 35 minutes, or until golden brown.
