- 3 c. rhubarb, cut in 1-inch pieces
- 1 egg
- 1/2 tsp. lemon juice
- 1 c. sugar
- 2 Tbsp. flour
- 2 Tbsp. oleo
Directions

1Wash and cut rhubarb into small 1-inch pieces.

2Beat egg; add lemon juice, sugar and flour.

3Mix together and pour over chopped rhubarb.

4Stir until well coated.

5Pour into unbaked 9-inch pie crust.

6Dot with oleo.

7Cover with top crust.

8Sprinkle with 1 teaspoon sugar and prick holes with fork.

9Bake at 425° for 10 minutes and then at 350° for 30 minutes or until golden brown.
