- 3 c. finely diced rose rhubarb
- 3 egg yolks, beaten
- 1 1/4 c. sugar
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1/8 tsp. nutmeg
- 1 Tbsp. melted butter
Directions

1Mix rhubarb with the beaten egg yolks.

2Blend in the sugar, flour, salt, nutmeg and melted butter.

3Mix thoroughly.

4Put in a pastry lined pan.

5Bake in hot oven (425° or 450°) for 8 to 10 minutes.

6Reduce oven to 325° and bake for about 35 minutes or until filling is firm.

7Serve plain or with Cool Whip or vanilla ice cream.
