- 3 cups chopped rhubarb
- 3 cups water
- 2 tablespoons honey
- 1 cinnamon stick
- 1 -3 tablespoon lemon juice
- mint sprigs or lavender, sprigs
Directions

1Place rhubarb, water, honey and the cinnamon stick in a large pot.

2Bring to boil.

3Let simmer for 15 minutes.

4After 10 minutes, take out the cinnamon stick.

5Remove from heat and let steep for 1 hour.

6Pour through a fine strainer without squeezing (squeezing will make it cloudy).

7Refrigerate for 2 hours before tasting.

8Add the lemon juice to taste, and the sprigs, if you like.
