Rhubarb Salad

Ingredients

  • 2 c. rhubarb, cut in small pieces
  • 1/2 c. sugar
  • 1/4 c. water
  • 1 small pkg. strawberry jello
  • 1 c. boiling water
  • 2 Tbsp. crushed drained pineapple
  • 2 small apples, chopped
  • 1/4 c. walnut meats, chopped

Directions

    Combine rhubarb, sugar and 1/4 cup water.

    Bring to rolling boil; reduce heat and simmer for about 5 minutes.

    Remove from heat.

    Let stand, covered, until partially cooled.

    Dissolve jello in 1 cup boiling water.

    Stir and blend in rhubarb mixture.

    Chill until thickened but not set.

    Fold in the pineapple, apple and nuts.

    Chill until set.

    Can be frozen.
