  • 1 Tbsp. olive or salad oil
  • 1 medium carrot, thinly sliced
  • 1 medium onion, chopped
  • 1 tsp. chili powder
  • 1/4 tsp. pepper
  • 1 (10 3/4 oz.) can broccoli and cheese soup
  • 1 1/2 c. parboiled rice
  • 1 (16 to 19 oz.) can black beans, rinsed and drained
  • 1 (15 1/2 oz.) can red kidney beans, rinsed and drained
  • 1 (10 oz.) pkg. frozen broccoli, thawed

Directions

    About 1 hour before serving, preheat oven to 375°.

    In a 4-quart saucepan over medium-high heat, in hot olive or salad oil, cook carrots and onion until golden and tender-crisp, stirring occasionally.

    Stir in chili powder and pepper.

    Cook, stirring 1 minute.

    Stir in broccoli cheese soup and 1 1/2 cups water over high heat to boiling.
