"Rice And Beans" Meal

Ingredients
- 1 (16 oz.) can kidney beans
- 1 clove garlic, peeled
- 1 Tbsp. regular olive oil
- additional oil to cover frying pan
- 2 medium onions
- 1 c. raw rice (can use instant)
- 1 qt. cold water
- 2 c. extra water for rice (approximately)
- salt and pepper to taste
Directions

1Combine 1 quart of cold water and kidney beans in 2-quart saucepan on high heat.

2When it comes to a boil, add olive oil, garlic, salt, pepper and 1 whole onion and turn down to simmer. Cook approximately 1 hour.

3In a large skillet, put enough oil to saute 1 medium onion, sliced or diced.

4Add rice, salt, pepper and 1 cup of cold water.

5Cover and steam for about 30 minutes, adding rest of water midway, until rice is cooked.

6Serve rice and beans separately.

7Great with Italian bread!
