  • 2 c. cooked rice
  • 1 tsp. vanilla
  • 1/2 c. sugar
  • 3 tsp. baking powder
  • 3 eggs, beaten
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt
  • flour

Directions

    Combine rice, eggs, vanilla and nutmeg.

    Mix well.

    Stir in dry ingredients.

    Add enough flour to make a dough that folds together.

    Drop by teaspoonfuls into hot fat (360°) and fry until golden brown.

    Drain on paper.

    Sprinkle or roll in sifted powdered sugar.
