Rice Casserole

Ingredients

  • 1 lb. medium hot sausage
  • 1 c. green pepper, chopped
  • 1 c. raw rice (not Minute rice)
  • 4 1/2 c. water
  • 1 stick margarine
  • 1 c. chopped onion
  • 2 pkg. Lipton chicken soup (not Cup-a-Soup)
  • 1 large can mushrooms with juice

Directions

    Fry sausage.

    Remove sausage and leave grease in pan.

    Add margarine.

    Saute pepper and onion until tender.

    Add mushrooms and liquid and cook 5 minutes.

    In a saucepan, bring 4 1/2 cups of water to a boil and add soup mix and rice.

    Cook for 25 minutes, stirring occasionally.

    Add vegetables and sausage; mix well.

    Put into a casserole or crock-pot to keep hot.
