Rice Casserole

Ingredients

  • 2 medium onions, chopped
  • 2/3 stick margarine
  • 1 c. rice (uncooked)
  • 2 cans beef broth (undiluted)
  • 1 (3 oz.) can mushrooms, chopped (optional)
  • 1 Tbsp. soy sauce

Directions

    Saute onions in margarine for a few minutes until tender but not brown. Add rice and cook for a few minutes longer, stirring constantly. Put rice and onions in a well greased 1-quart casserole. Add beef broth, mushrooms and soy sauce.

    Bake, uncovered, at 350° for 40 to 45 minutes. Stir 2 to 3 times while cooking. Serves 6.
