Rice Casserole

  • 1 c. rice
  • 2 1/4 c. bouillon or 2 1/4 c. water with 3 chicken bouillon cubes
  • 1 tsp. each minced onion, celery and green pepper
  • 1 (4 oz.) can green Ortega chili peppers
  • 1 (16 oz.) sour cream
  • 3/4 to 1 lb. Jack cheese
  • grated Cheddar cheese

Directions

    Cook rice in bouillon with onion, celery and green pepper added.

    Seed, wash and cut up chili peppers.

    In buttered casserole, put a layer of rice, 1/3 of the sour cream, 1/3 of the chilies and 1/2 of the Jack cheese.

    Repeat layers.

    Bake at 350° for 20 to 30 minutes.

    The last 5 minutes, cover with Cheddar cheese.
