Rice Casserole

Ingredients

  • 1/2 stick butter
  • 1 small onion, chopped
  • 1 (10 oz.) can mushroom soup
  • 1 small can mushrooms, drained and chopped (reserve juice to add with soup)
  • 5 oz. grated sharp Cheddar cheese
  • 1/2 c. toasted, chopped almonds
  • 2 c. cooked rice

Directions

    Saute onion in melted butter until tender.

    Stir in mushroom soup and juice; mix well.

    Add cheese, mushrooms and almonds.

    Mix with rice and put in buttered casserole.

    Bake 20 minutes at 350° or until bubbly.
