Ingredients
- 1 c. short grain rice
- 4 Tbsp. butter
- 1/2 medium onion, minced
- 1 clove garlic, minced
- 1 3/4 c. chicken broth
- 1/2 c. beef broth
- 1/4 tsp. salt
- 1 c. finely diced zucchini
- 1 c. finely diced yellow summer squash
- 1/2 c. grated Parmesan cheese
- 3 Tbsp. lemon juice
- 1/4 tsp. cayenne pepper
Directions

1Melt 2 tablespoons butter in heavy saucepan.

2Saute onion until soft, but not browned.

3Add garlic; saute 1 minute, being careful not to burn.

4Stir in rice.

5Coat with butter mixture. Add broths, salt (if used) and pepper.

6Cover.
-
7Simmer for 15 minutes.
