- 3/4 c. coarsely chopped green pepper
- 3/4 c. chopped onion
- 3/4 c. chopped celery
- 2 Tbsp. vegetable oil
- 2 c. strong beef consomme or broth
- 1 c. uncooked long grain rice
- 1 c. condensed cream of mushroom soup
- 1 (2 oz.) jar pimentos, drained and cut in long, thin strips
Directions

1Stir-fry pepper, celery and onion in the oil in a large skillet about 8 minutes, until tender.

2Add consomme and rice. Cook, stirring for 5 minutes.

3Blend in mushroom soup.

4Pour into lightly buttered 2-quart baking dish.

5Cover.

6Bake in oven at 300° for 1 hour or until rice is done and liquid has been absorbed.

7Decorate, if you like, with pimento strips.
