Rice Casserole

Ingredients

  • 3/4 c. coarsely chopped green pepper
  • 3/4 c. chopped onion
  • 3/4 c. chopped celery
  • 2 Tbsp. vegetable oil
  • 2 c. strong beef consomme or broth
  • 1 c. uncooked long grain rice
  • 1 c. condensed cream of mushroom soup
  • 1 (2 oz.) jar pimentos, drained and cut in long, thin strips

Directions

    Stir-fry pepper, celery and onion in the oil in a large skillet about 8 minutes, until tender.

    Add consomme and rice. Cook, stirring for 5 minutes.

    Blend in mushroom soup.

    Pour into lightly buttered 2-quart baking dish.

    Cover.

    Bake in oven at 300° for 1 hour or until rice is done and liquid has been absorbed.

    Decorate, if you like, with pimento strips.
