- 1 large onion, diced
- 1/4 lb. margarine
- 1 c. long grain rice
- 1 can diced water chestnuts
- 2 cans beef consomme
- 1/2 c. grated carrots
Directions

1Saute, but do not brown onion in margarine.

2Remove onion to a small bowl.

3Saute rice until it turns yellow, then add onions, water chestnuts, beef consomme and grated carrots.

4Cover and bake about 40 minutes at 375°.
