Rice Celery Skillet

Ingredients

  • 1/2 c. chopped onion
  • 1/4 c. margarine
  • 1 (16 oz.) can tomatoes, cut up
  • 1/2 c. stuffed olives
  • 1 tsp. marjoram
  • 1 c. rice
  • 6 c. thinly sliced celery
  • 2 1/2 c. water
  • 2 tsp. salt
  • 1/4 tsp. pepper

Directions

    In a large skillet, saute onion and rice in margarine for 3 minutes or until onion is almost tender and rice is lightly browned.

    Add celery and saute 1 minute.

    Stir in remaining ingredients.

    Bring to a boil. Cover and reduce heat.

    Simmer 20 minutes or until rice is tender.
