  • 5 to 6 c. cooked rice
  • 1 c. Spam
  • 1 medium onion
  • 1 c. celery
  • 1/2 c. green peppers
  • 3 eggs
  • 2 Tbsp. oil
  • 3 Tbsp. soy sauce
  • salt and pepper to taste

Directions

    In skillet, brown onions and Spam.

    Add celery and green peppers.

    Mix eggs in separate bowl, then add to skillet and scramble with onion mixture.

    Pour over cooked rice and flavor with soy sauce, salt and pepper.
