Ingredients

  • 1 c. rice
  • 1/2 tsp. salt
  • 1 1/2 c. cold water
  • 1/2 lb. (plus) pork sausage
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 1 c. celery, chopped
  • 2 Tbsp. oleo
  • 1 small can mushrooms
  • 1 small jar pimentos, chopped
  • 1 c. chicken broth
  • salt and pepper to taste

Directions

    Partially cook rice in salt and water.

    Cook sausage in skillet and drain.

    Saute vegetables in oleo.

    Combine rice, sausage and all vegetables; season to taste.

    Add chicken broth to moisten.

    Bake at 350° for 30 minutes.
