- 1 bell pepper, chopped
- 1 onion, chopped
- 3/4 c. chopped celery
- 1 c. uncooked rice
- 1/4 tsp. salt
- 1 Tbsp. Italian sausage
- 1 Tbsp. dry parsley flakes
- black pepper to taste
- 2 cans beef consomme soup
- 1 (4 oz.) can mushrooms, drained and chopped
- 1 can water chestnuts, drained and chopped
Directions

1Melt oleo in a 1 1/2-quart saucepan.

2Cook vegetables over low heat for 10 minutes.

4Pour into a large casserole.

5Bake for 1 hour in a 350° oven.
