Ingredients
- 1/2 c. finely chopped onions
- 1 Tbsp. butter
- 8 eggs*
- 1/2 c. milk
- 1 tsp. salt
- 1 tsp. Worcestershire sauce
- 4 to 5 drops hot pepper sauce
- 2 c. cooked rice
- 1 (4 oz.) can chopped green chilies, undrained
- 1 medium tomato, chopped
- 1/2 c. shredded Cheddar cheese
Directions

1In a 10-inch skillet over medium heat, cook onions in butter until tender.

2Beat eggs with milk and seasonings.

3Stir in rice, chilies and tomato.

4Pour in pan.

5Reduce heat to medium-low. Cover.

6Cook until top is almost set, 12 to 15 minutes. Sprinkle with Cheddar cheese.

7Cover.

8Remove from heat.

9Let stand about 10 minutes.
