Ingredients
- 1 c. rice
- 2 c. water
- 1 Tbsp. oil
- 2/3 c. chopped onion
- 1 clove garlic, crushed or minced
- 2 medium tomatoes, finely chopped
- 1 medium zucchini, coarsely chopped
- 1/2 tsp. oregano
- 16 oz. can kidney beans, drained
- salt and pepper to taste
- grated Cheddar cheese (optional)
Directions

1Saute onion and garlic in oil until soft.

2(I use olive oil.) Add tomatoes, zucchini and oregano.

3Cover skillet and simmer about 5 minutes or until vegetables are tender-crisp.

4Add the beans and simmer mixture, stirring occasionally, until heated through.

5Season with salt and pepper.

6Serve over hot rice and sprinkle with cheese.

7Serves 4.
