- 1 green pepper, chopped
- 1/2 c. sliced, pitted, ripe olives
- 1 envelope Italian style dressing mix
- 1 bag Success 10-Minute brown rice, cooked
- 1 c. shredded pack skim Mozzarella cheese
- 1 garlic clove, minced
- 1 can Italian style tomatoes
Directions

1Cook and stir pepper and garlic in margarine until tender. Add tomatoes and salad dressing.

2Simmer 10 minutes.

3Stir in rice and top with cheese.

4Sprinkle with olives.
