- 1 bell pepper, chopped fine
- 2 bunches shallots, chopped fine
- 1 stick margarine
- 1 large can pitted black olives, drained and chopped
- 3 c. cooked rice
- 1 lb. crawfish tails (optional)
- 1/2 lb. ham seasoning, chopped fine
Directions

1Saute pepper and shallots in margarine.

2If using crawfish and ham, add now and saute with seasoning.

3Add olives and stir in rice.

4Simmer until heated thoroughly.
