  • beef Rice-A-Roni
  • 15 oz. can stewed tomatoes
  • 8 oz. sour cream
  • Monterey Jack and Cheddar cheese
  • diced chilies (4 oz.)
  • 1 lb. lean ground beef

    Brown beef with chilies; remove from pan.

    Brown Rice-A-Roni with drippings.

    Add 2 1/2 cups of water, seasoning packet and tomatoes.

    Boil, cover and simmer 30 minutes.

    Add meat.

    In large casserole layer beef, rice mixture, sour cream and cheeses.

    Bake at 350° for 30 minutes.
