  • 2-1/2 cups Water
  • 1/2 teaspoons Salt
  • 1 Tablespoon Oil
  • 2 cups Rice Flour Roasted
  • 1 Tablespoon Ghee

Directions

    Boil 2 cups of water with salt and oil and mix with the rice flour. Add the remaining 1/2 cup water. Knead to a dough.

    Grease a piece of banana leaf or plastic sheet with oil. Flatten out a scoopful of the dough on the greased surface with your palm to make a round-shaped pathiri. Repeat the process with the remaining dough.

    Dab oil on a griddle and cook the pathiris in batches. Flip them so that both sides cook evenly. Use the back of a spoon or a folded banana leaf to press gently on the pathiris as they cook so that they puff up. Dab some ghee on both sides.

    The hot pathiris go well with all types of curries.
