Rice-Pecan Stuffing

  • 2 boxes Uncle Ben's long grain and wild rice mix
  • chicken bouillon
  • 1/2 c. margarine
  • 2 c. chopped onion
  • 2 c. chopped celery
  • 1/4 c. minced parsley
  • 2 c. chopped pecans
  • turkey or chicken giblets (if desired)
  • 1 tsp. thyme
  • 1/2 tsp. poultry seasoning
  • 1/4 tsp. pepper

Directions

    Cook rice according to box directions, substituting bouillon for water (include seasoning packets).

    Melt margarine in skillet. Add onion, celery and parsley.

    Saute onion, celery and parsley over low heat until tender, stirring frequently.

    Combine with cooked rice, pecans, giblets and seasonings.

    Toss together lightly.

    Bake in large dish at 350° until hot.
