- 3 tablespoons butter
- 1 medium onion, diced
- 2 cups vermicelli, raw, broken into 2-3 inch lengths
- 1 cup long-grain rice, raw
- 13 cup pine nuts
- 2 12 cups chicken broth
Directions

1Heat the butter in a large skillet.

2Add the onion and saute over medium heat until it is a light golden color.

3Add the vermicelli, rice and pine nuts.

4Continue to saute for 2-3 minutes, stirring to coat all with the butter.

5Add the chicken broth and bring to a boil.

6Cover, reduce heat and simmer on low heat for 18-20 minutes (do not lift the lid before 18 minutes).

7Uncover the pan and fluff the pilaf.

8You can make this ahead and reheat it in the oven or microwave.
